SharePoint 2013 Workflow - Customize Collect Feedback

I have an InfoPath form in an SP2013 form library that currently uses the "Collect Feedback" SP2010 workflow. The requirement for this workflow is that the customer has an amorphous review process that they want to model in the workflow. This may be a brutally obvious question with the brutally obvious answer of "it can't be done", but is there some way to mimic the functionality of a task list on an InfoPath form?
